2020 skin-contact Sauvignon Blanc from the Lone Star Creek vineyard in the Upper Yarra Valley, VIC. Handpicked, destemmed and cold soaked for 1 week before wild fermentation occurred. Plunged or pumped over once a day and then remained on skins for a further 3 months before pressing to old French hogsheads for maturation on gross lees until racking and tank settle. Bottled unfined & unfiltered.

Textural & layered harnessing pithy phenolics, balanced with natural acidity and moreish fruit character. Woof!!
