Skin-fermented for about three weeks, but the infusion is gentle, lending subtle grip and amber tones rather than mouth-puckering tannin. There are some bitter herbal notes adding to the punchy flavours. The wine has a persistent finish with a slight salinity reflection of proximity of the Pacific Ocean. The granite soil is responsible for the bright acid, and mineral notes in the wine. Marmalade-y, rose blossom on the nose but as always with these granitic soiled vineyards. Unfiltered.
